It is led by the researchers Claudia Nallely Sánchez Gómez, Julieta Domínguez Soberanes and María Teresa Orvañanos Guerrero.

This project arises from the support received by CONACYT through the program called Programas de Estímulos a la Innovación (PEI) where the project was benefited. The original title is "Desarrollo de un proceso inmótico a partir de algoritmos para la separación y aprovechamiento de componentes en fritura de grasas animales" (INNOVAPYME: 231518). The company Empacadora de Carnes San Francisco S.A. de C.V. worked with Universidad Panamericana campus Aguascalientes.
We obtained the INDAUTOR certificate of software register through technological development. The computer program was called Intelligent Food Fry (IFF) 03-2018-091109521600-3.
The project aim is to automate the animal fats frying process to register variables like time, temperature, humidity, raw materials, and ingredients, for later, based on historical data and using machine learning algorithms, the system can optimize ingredients and calculate the cook conditions for maximizing the quality and the product performance.
